On the Menu

Yes, a poor man's supper. A hunk of bbq'd steak and 5 little stuffed mushrooms. But surprisingly delicious. I got sick of cooking (don't we all?) and made this a few weeks ago. Jay bbq'd the steak, which was cooked pretty much to perfection, and I whipped up some Nutty Stuffed Mushrooms with ingredients that have been kicking around the fridge. Don't feel sorry for us-- since then, we've gone up in the world.
Stromboli. Can you say YUM? Oh man. I'm going to quote my sister-in-law Emily on this one and say that if you thought your family loved you now, make this delicious meaty-cheesy stromboli and they will love you even more. SO GOOD. You can find it in the Better Homes Cookbook if interested. This one has pastrami, salami, pepperoni, and swiss cheese. I also made one with ham and swiss, mozzarella, and roasted red peppers. Side note: I made bun dough in my breadmaker instead of bread dough and it made it so sweet but salty and moist and just plain YUM!

Cheesy Eggs Benedict. I made this Sunday morning, the benefits of having an 11:00am meet time for church. English muffin, tomato, poached egg, cheesy sauce, pepperoni. Also in the Better Homes Cookbook and so scrumptious. Disclaimer: I love the Better Homes Cookbook, but almost none of the recipes are health-wise. If I continue to cook like this (unlikely, but still possible) Jay and I will not only be extra greasy with gravy on the side, but possibly sporting the Michelin Man look. I suppose it's time for rice, salmon and broccoli tonight.
